Ingredients:
- 4 large potatoes, washed and cut into wedges or thick slices
- 1/4 cup olive oil
- 4 cloves of garlic, chopped
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, lemon juice, salt, and pepper. Mix these herbs and spices well to create a marinade.
- Add the potato wedges to the bowl and toss them in the marinade until they are evenly coated.
- Place the coated potato wedges on a baking sheet in a single layer, making sure they are not crowded.
- Bake the potatoes in the preheated oven for about 45 minutes or until they are golden brown and crispy, flipping them halfway through the cooking time for even browning. Be sure to add more olive oil if need be. To get the best flavour be liberal with the olive oil
- Once the potatoes are cooked, remove them from the oven and transfer them to a serving dish.
- Garnish the Greek-style potatoes with freshly chopped parsley.
- Add Salt and Pepper to taste.
