Ingredients
2 cups of black rice (available in all good stores)
1 tablespoons of lemon pepper(available in all good stores)
8 prawns
8 tenderstem broccoli heads
2 tablespoons of rapeseed/olive oil
1 tablespoon of butter
Method
This is a very simple dish to prepare and it will be a show stopper for any guests you have for dinner or even for the food enthusiasts.
First of all bring a pot or medium size pan of salted water to the boil. Add the rice and cook for 20 minutes stirring occasionally.
In a separate pot or pan bring to the boil with a little salt fifteen minutes of the black rice cooking.Add broccoli and cook for a few minutes and strain. Add a frying pan to the heat add the oil and add the prawns and cook for a few minutes. Strain the rice and add back to the pan or pot add the butter, season with salt and pepper and mix well. Arrange on a large plate add broccoli on top along with the prawn and sprinkle the lemon pepper over the top.
