Ingredients – For the Roasted Fennel With Citrus Dressing Recipe

Roasted Fennel

  • 3 large fennel bulbs, fronds reserved
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon ground coriander
  • ½ teaspoon fennel seeds, lightly crushed
  • Zest of ½ orange
  • Zest of ½ lemon

Citrus Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar or apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup, optional
  • ½ small garlic clove, finely grated
  • Sea salt and freshly ground black pepper, to taste

To Finish

  • 1 large orange, peeled and sliced into rounds or segments
  • ¼ cup pistachios, roughly chopped
  • 2 tablespoons fresh parsley leaves
  • 1 tablespoon fresh mint or basil leaves
  • Reserved fennel fronds
  • Pinch of chili flakes, optional
  • Extra virgin olive oil, for drizzling

Prepare the Fennel

Preheat the oven to 425°F.

Trim the fennel stalks, reserving some of the fronds for garnish.

Cut each fennel bulb into wedges, keeping a little of the core attached so the wedges hold together.

Place the fennel wedges on a baking tray.

Drizzle with olive oil, then season with salt, pepper, coriander, fennel seeds, orange zest, and lemon zest.

Toss gently to coat.

Roast the Fennel

Roast for 25–35 minutes, turning halfway through, until the fennel is tender, golden, and slightly charred at the edges.

The fennel should be soft in the center with a little caramelization on the outside.

In a small bowl, whisk together the olive oil, orange juice, lemon juice, vinegar, Dijon mustard, honey or maple syrup if using, garlic, salt, and pepper.

Arrange the roasted fennel on a large serving platter.

Tuck the orange slices or segments around the fennel.

Spoon the citrus dressing over the top.

Finish with chopped pistachios, parsley, mint or basil, fennel fronds, chili flakes if using, and a final drizzle of extra virgin olive oil.
