Cleaning Instructions :

Place shells in cold water

Place generous tablespoon of salt and gently boil for one and half hour.

Let them rest in the hot water until the water is cool enough to handle

Open from the top of the shell and clean

Pull out the snail and cut into small pieces

Place in a bowl with and add good olive oil, parsley, a generous amount of salt and lemon
