Ingredients

150g fusilli pasta

4 Chorizo Sausage (sliced)

2 cans of chopped tomatoes 

1 teaspoon of smoked paprika 

1 clove of garlic (crushed)

2 tablespoons of tomato paste

250 ml of chicken stock 

1 medium-sized red onion (sliced)

1 red pepper (sliced)

1 green pepper (sliced)

8 cherry tomatoes (halved)

4 basil leaves 

1 tablespoon of dried mixed herbs 

A drizzle of olive oil 

The Cooking

First off, get a medium-sized pot of water on and add a teaspoon of salt, bring it to a boil, and add your pasta. Cook for approx 10-12 minutes, then strain through a fine sieve or colander.

Moving on to the method to create this chorizo sausage pasta recipe, bring a medium-sized frying pan to medium to high heat add a teaspoon of oil add the sausage dried mixed herbs garlic and onion and pepper and cook for approx 3-4 minutes. Add in the smoked paprika and cherry tomatoes, tomato paste and mix well add chicken stock and chopped tomatoes. Bring it to the boil and simmer for approx 10 mins add basil. This will cook at the same time as the pasta is cooking. You can either mix the pasta through it or serve it with the pasta on top choice is yours to enjoy.
