This recipe takes only 15 minutes to prepare and then just throw in the oven. You can either roast the chicken yourself at home or buy one from your local supermarket already roasted,

Preheat oven to 180 degrees

I Roasted chicken
I large packet of fresh spinach
2 large onions chopped
I clove of garlic chopped
100 grams of feta cheese crumbled
2 tablespoon of sour cream
3 layers of filo pastry
Salt and pepper to taste
2 tablespoon Olive
A small amount of butter or extra oil for brushing

Remove the white meat from the roasted chicken and cut into small squares or shred ( if preferred )
In a nonstick pan add oil and gently heat through
Add the onion and garlic and sauté until the onion is transparent
Add the chopped chicken and spinach and gently toss through until the spinach has wilted and blended in with the chicken.
Remove the chicken from the heat and let it cool a little
Crumble the feta cheese and stir through
Add the sour cream and salt and pepper to taste
On a large wooden board lay out one sheet of filo pastry and lightly brush the sheet with some butter or olive oil. Add another sheet on top and brush the same. Do this one more time.
You now have three sheets of filo pastry one on top of the other
Place the chicken mixture onto the pastry and gently spread evenly across the entire filo …
Take one end of the filo and gently roll as you would for strudel .. ( see image )
Place the rolled roulade on to a greased dish and brush a little butter on top.
Place in oven and cook until the pastry is golden brown. Check after 15 minutes and cook to your liking
Serve with vegetable or salad
