Chefs Biography - Chef Brian Polcyn
World renowned Charcuterie expert and Award Winning Chef Bryan Polcyn is chef and proprietor of some of USA most acclaimed restaurants among them Michigan's famed Forest Grill. An exponent of using the freshest and seasonal local ingredients, his charcuterie skills are highly regarded by his peers and those who have enjoyed his exquisite delicacies. A three gold medal recipient from the American Culinary Federation, Polcyn has authored books on the subject of charcuterie and featured in television food shows. He is a licensed pilot , an instructor at the Michigan SchoolCraft College and a strong believer in giving back to the community. These strong ethical beliefs have have led him to support many local charities including the Children's Leukemia Foundation and Chefs Against Hunger.
