To prepare this delicious banana bread recipe heat oven to 350F/180C
In a medium bowl mash 4 ripe bananas, add 3 eggs and mix together well…
Add 1/4 cup melted butter (or coconut oil) and mix….then mix in 1/4 cup organic white sugar and 1/2 cup organic brown sugar (you can use 3/4 cup coconut sugar in place of the other sugars, if you prefer)
Then sift in 1 tsp baking powder and 1/4 tsp baking soda, 2 cups whole wheat flour (or gluten-free flour) and a pinch of salt and fold the batter together until just mixed…..
I used 3 smaller baking tins… you can use 1 regular if you like…
I added frozen raspberries to one, almonds to the 2nd and cinnamon sugar and a little butter to the 3rd before baking this banana bread recipe
Place in oven and bake for 25-30 minutes..check them after 30 minutes and loosely cover with baking paper if needed (the one with raspberries took a little longer to cook in the middle… test with a knife inserted into banana bread and it should come out clean. Enjoy!!!l
