Ingredients Serves 6
4 Chicken Drumsticks – Skinned 4 Chicken Thighs – Skinned
2 Table Spoons Olive Oil I medium chopped Onion
5 cloves garlic 3 cups chicken broth warmed
2 tablespoons lemon juice 3 carrots sliced across
2 stalks celery, sliced across
15 ounces ( can ) garbanzo beans , drained well
14 ounces ( can ) artichoke hearts , drained well
Lemon Marinade * ( see recipe in salads – sauces page )
Preparation
Spread Lime Marinade over chicken drumsticks and thighs and set aside for 15 minutes
In a large frying pan, pour in olive oil and heat to medium high temperature
Add onion and garlic , quickly stir and then add chicken
Cook on medium heat for 15 – 20 mins turning chicken over until cooked
Stir to loosen pan drippings and then add carrots and bring to boil
Cover and reduce heat to low and simmer until chicken is tender, for about 20 mins
Add Celery and bring to boil
Stir in garbanzo beans and gently place artichoke hearts across the top
Cover and reduce heat to low and simmer for 5 more minutes
With slotted spoon, remove chicken and vegetables to warm serving bowl
Skim off any fat in pan and boil juices for about 5 mins
serve in a gravy boat with spout
